Because Egyptian art is symbolic and stylized, it doesn't seek to accuracy portray reality. Also, Egyptians did not have access to unlimited color selections, but rather had a very limited pallete of colors to work with, thus even if they wished to represent things perfectly accurately they would have been unable to do so.
