Basically it's the exact kind of battle that every Roman general would fantasize about having because it's guaranteed victory. Suetonious could have won just as decisively if he had half as many men as he did.

From what I understand she didn't really have a choice. Just like with Arminius most of her followers were dumb as shit barbars who refused to change with the times and preferred a quick fight so they could get their loot and fuck off back to home, rather than bother with any formation of strategy or tactics.

The problem with all of those confederate uprisings was that the tribes tended to hate each other as much as the Romans, and if didn't give them quick fights and victories they were going to go their separate ways. Boudicca was pretty much fucked either way she went.
