When people say Islamic golden age, they are referring to an era where literature and ideas was spreading throughout the Islamic world, not that it was Muslims actually doing it although lots of Muslims did contribute. Kinda like how the Romans didn't invent everything the Romans used and spread about their empire.

I don't know why the term 'Islamic golden age' is such a controversial topic here (other than its because its the Muslims of coarse), having ideas spread from ancient Persia and India and rediscovering ancient works and having them spread about to the point where Cordoba in fucking Spain (of all places) was a center of learning is quite the feat.
