The term Greco-Roman refers to the classical period; that (incorrect) stereotypical image you get in your mind of white-washed columns and statues. Greco-Roman architecture, Greco-Roman art, Greco-Roman sculptures, etc. The joke is that OP instead used the term to refer to the Byzantine Empire, which was a rump state of the Roman Empire centered in Greece, thus making it a Greek-Roman state despite carrying an aesthetic that was way different from the Greco-Roman aesthetic.
