Could anyone give me a non-meme explanation for this? Why is it in the US' best interest to do this and why would anti-israel bias be the primary motivator for doing so?

Israel's a relatively consistent ally in the middle east in a place where that's rare, Israel gets palestinian lands, the US gets friendly ports and air strips.

It's just symbolic at this point because the US already lost its vote in 2013 when it stopped funding them

OPEC countries control UN Human Rights and UNESCO and by extension the UN. The UN now has largely become useless. In the past, West could dictate some terms and get things done, but now that countries are growing more richer, their voice carries more, thus more conflicts and chaos.

People who think this is just about anti-Israel is missing the point. Its largely about the effectiveness of the UN, which has diminished tremendously over the last few decades. Now it doesn't hold the interest of the western democracies, instead holds the interest of the non-western countries.

UNESCO doesn't recognise Jewish settlements despite romans and later Arab sources agreeing with the Jewish state

Anti-Israel bias is likely just a cover for another reason which the US doesn't want to state, namely that UNESCO is just basically just another form of foreign aid. Of course Trump would have wanted to pull out. This way Israel gets in the line of fire and Trump doesn't have to deal with Democrats screaming about "muh foreign aid."

This is actually just a list of Jewish congressmen and senators, not a single one of which has Israeli citizenship and you would be very hard pressed to find actual evidence of it.
