Glass, Romans were able to make large quantities of clear window glass and so had windows, the rest of the world just had shutters. Makes a difference on a cold winter night.
Concrete, Romans had concrete for construction, makes building them aqueducts much easier
Indoor plumbing, romans had it.

Technological and scientific advancement in the ancient and medieval world was significantly slower than today. Rome seems pretty standard for the time. It was only with the Scientific Revolution, that the quick pace of technological advancement become common. And even then, it started slowly, and then exponentially increased.

The ancient world lacked a lot of the basic instruments that we take for granted, and they did not believe as much in terms of direct scientific observation. So even a lot of the hyped up Greek science and philosophy is just armchair thinking. People didn't think they needed to add much else to this speculation.
