The amount of water you're carrying around can make your weight fluctuate substantially. In order to gain a whole kg of actual solid mass, whether it was muscle or fat, you'd have to have eaten a surplus of several thousand calories that day.
You can't always trust the scale. Make sure to take other measurements - you waist for example.

My body is also crazy in that I can literally not eat for three days, trek 30km and put on 2-3kg. The only explanation I can think of is fluid retention
So that's why I'm averaging a kg a week... I'm on like a ~1500-2000 cal deficit
watch out for hair loss.
It will grow back once you start eating at maintenance or bulk.
