My linear progression is becoming really difficult, lots of grinders on bench and deadlift
BW 78kg
Squat 105x5x5
Bench 75x5x5
Deadlift 140x5

I doubt I can add 5 more kilos over the next few sessions except maybe on the squat. I've already tried eating my way to gains and shot up over 20% bf - yes, at such a low bodyweight, I'm barely 5'8.
Is this about an appropriate time to switch to longer term programming, or am I supposed to get more gains on linear? I ask because there seem to be a lot of newbies hopping on sheiko or whatever thinking they're special snowflakes with their 90kg deadlift sets and I don't want to fall in that trap.

Anybody training for anything significant will have pain. The trick is knowing what you can work through, and what you can't.

When in doubt, deload 5-25% off your maxes and perform some auxiliary lifts/GPP until your body heals.
