Shiko, lots and lots of shiko. Pushing around 300+lb men for 6 hours a day helps too.

holy shit that stomp thing is one hell of a glute workout.

Traditional training didn't really do any "lifting" in the sense of modern training. But they still lifted heavy things, but more for upper body. You'll see lifting weights in some stables, but doing hundreds of shiko, squat walking and pushing against a resisting person is the tried and true way of sumo leg building. Try doing some shiko and you'll feel the burn.
