As a chef I must say that oils are very different in their way of cooking, but not really any difference between being healthy and unhealthy. Coconut oil is good because it stand very high heat before burning. Rapeseed oil is great because it's cheap, flavorless and can also stand high temperatures. Butter has a great flavor, but does easily burn.
