I dunno about joint inflammation but when I have stomach cramps I eat a bit of ginger about the size of about the first joint of my thumb to the tip (best reference I can think of right now) and it seems to make it go away within about 30 mins. Dunno why. Somebody else try it

I think lots of foods can, at least if you have a deficit. Going from a mineral/vitiamin deficit to having enough will make a difference - that's why "aphrodisiacs" like oysters work. It's not because they're magic, but because they're rich in zink, and if a guy has a deficieny in zink, some oysters for lunch can mean a hightened libido that same night.
