i usually make them with eggs, (ripe) banana and cinnamon, cooked with coconut oil and i eat them with plain yoghurt.

yup, i blend it all together into a smooth batter.
also, not sure what sort of pan you have, but my pans are sticky af, so i always use coconut oil.

Add butter and syrup then I just mash them with a spoon and stir them until they are a slurry

i always found those to be too eggy in texture, so personally, i add a little flour just to get a more conventional pancake texture. coconut flour or almond flour is pretty good

I might try it both ways. Play around with it until I find a good texture. How about adding a little whey to it? Or maybe yogurt?
