Because western Europeans learned how to control it and use it to their own ends instead of just constantly fighting it. Even then though, it wasn't perfect. Britain still lost Ireland, and the Netherlands still lost Belgium. The other half of the continent was filled with sprawling multi ethnic empires, so any attempt at promoting nationalism was inevitably going to rile up the minorities.

Netherlands losing Belgium has nothing to do with nationalism.

I mean one should probably discuss it on a case-by-case analysis, not just with generalizations about East and West. And by nationalism you probably only refer to separatism.

Yes, France succeed in destroying any sort of separatism within its own borders. That's because during the French revolution all the provinces were abolished and replaced with departments and a more centralized government. Most people in France were illiterate peasants at the end of the 18th century, so it was a bit easier to enforce France as the sole language of literacy.

Austro-Hungary couldn't really do this. Something similar was tried within Hungary but it failed. The A-H itself existed to appease the Hungarian nationalists. By then the nationalities gradually became more literate and had their own culture elites so it was harder to simply assimilate them. Separate crown land still existed.

Russia pretty much had absorbed bigger amount of nationalities and cultures into their federation than amount of western countries. Belarus and Ukraine are pretty much soulless proof of that even if they are beyond their borders now.
Germany/Austria were terrible at trying to germanize slavs.
Britain can potentially split into two thanks to scotts and they didn't kept irish either
