"Starting" shit as a concept does not work for a time when states were there was perpetual war.
For that matter, only the saxons and the prussians were actually conquered. All of the others converted (or rather, the ruler converted and his subjects followed suit).

The more interesting question here is not why christian states attacked pagans (or converted them) but rather why there was no group within these states to keep their religion. Actually, there was one: the jews. It's possible that islam just allowed more other religions (or a greater share of those present in its sphere of power) as accepted minorities than christianity. Note that real paganism has also died out within muslim countries.

The reason the Teutonic Order was granted land by the Poles was because Poland couldn't deal with the Prussian raiders so in a sense yes, the Northern Crusade was the result of Pagans kicking the hornets nest. Again, why there are millions of Christians still living for centuries under Islam rule, but there are no pagans in Europe, Muslims in Spain and Sicily, and both Americas are 100% Christian? Sure, there were occasional persecutions, but you can see from the result they weren't as severe as the ones Christians performed in Spain, Baltics, and Americas.

There are plenty of muslims in Europe and America to the point where they have even annexed european land. Look at Albania, Bosnia, Kosovo. They even tried to annex western FYROM in 2001. In contrast with Anatolia where the Turks completely wiped out 99% of their Christian population in a place where they used to be a majority governed by an Empire. And the few million Christians living scattered in the Levant are nothing compared to what they used to be under Rome.

Most muslims in Europe are a result of post WW2 immigration.
The only significant native communities of Muslims in Europe are from the Balkans as a result of long-lasting Ottoman rule or are involved in a secession conflict in the Caucasus.

The middle east was not really threatened by Christians, so they had no reason to crack down. (The Crusades were considered minor annoyances, like pirate invasions, but the empires never feared for their existence).

Europe meanwhile was existentially threatened by Islamic armies. They didn't want to give them one fucking chance to survive. They made the right choice.

They both treated minorities the same way. There are a few reasons why Christians remain in majority Muslim countries today while pagans don't remain in majority Christian ones.

The Christian people are the descendants of those pagans. Christianity was a generally peaceful conversion within and under Rome, the pagans just adopted a new faith.
