Because tricolors are simple and easy to identify, hence why they were used in naval warfare first, it all started with the French Revolution, though the Dutch and Russians had a tricolor before that.

We've had it since the 16th century, we don't really use these nowadays because they were replaced with the more easily identifying red-white-blue and the fact that it was used by Dutch national-socialists, making it a bit of a taboo.

With the exception of France and Russia they are inplace for countries in which nationalism is an ethnic rather then a cultural phenomenon, and as such are too divisive to be used as the flag.

The point of a flag is to clearly communicate who and what you are, where you come from and in more tumultuous contexts what the fuck you want.

Flags that don't obey the norms of vexillology and heraldic principles are degenerate.

With that said, it's probably because the liberal nation-state are our most prominent form of government, OP. The tricolor was at the time used as the "flag of the people/nation" and/or neutral, as opposed to monarchies who typically added their house to the flag. Heraldry and pre-modern customs were shunned. If there's still a monarchy around in the country, they typically use their own flag with their own symbols.

There's a grey area where a kingdom is kind of a nation-state, and the house of the king is not as important to the identity of the state, so you get a fusion between heraldic and national symbol. Pic related.

As for the Irish flag you posted: the reason some flags feature obscene mythological and national symbols is because of high degrees of LARPing. It's the same tendency as the Nazi runes.
