What would history think of WWII if the Nazis hadn't enacted the Holocaust? What if WWII happened exactly the same exact that Hitler didn't give a shit about Jews, gypsies, and gays?

Germany would be more successful in the war, and they almost won in 1941/1042, so who knows. If it's enough to crush the Soviets then and Stalin makes peace after his counter attacks get obliterated even harder than they did in reality, perhaps the outcome could be different.
Otherwise the Germans would still lose, after inflicting more allied casualties and leaving a more ambiguous legacy. It's easy to argue that the genocidal Nazi Empire had to be destroyed, but if it was just some shitty dictatorship that invaded another shitty kind of aggressive warmongering state (Poland in the 1920s), people would be far more doubtful of whether it would have been all worth it and ethnocentrism would be far more acceptable.

The Germans committed many atrocities that had nothing to do with race. See the massacres of civilians in France, where thousands of people, including women and children, were slaughtered because of association with a rebel assassin or some other insurgent.
Besides that, the nature of modern warfare makes any war of aggression an act of evil by definition. Gone are the days when you could march an army into a country, engage the enemy in a field somewhere, and then take over if you were the victor. Total war decimates cities, populations, economies, and creates an entire generation of people who are victimized by the war, if they're lucky enough to survive.
Just look at the number of people that died on all sides - including the Germans - and then ask yourself if anything could have justified that. Even if the Germans had won the war the Russians it wouldn't have been worth it, Russia would be a destroyed shell of a country only valuable for the oil in the Caucasus, and the Germans would have been defeated by the Americans anyway.

The campaigns in Poland, France, the Benelux countries and the North were all fast and caused minimal unintentional destruction and left less people dead than many classic battles.

If Russia had made peace in early 1942, it still would have been a bloodbath compared to anything else ever before, mostly but not exclusively thanks to the German treatment of Russian POWs (basically just let a couple million of them die because the supply is insufficient for the military as is and they're just animals anyway).

Propaganda would have found something else to demonize germany with. That went too well since WW1 to change it. Then it would be Russia for a while, then the Arabs and then back to Germany. Just like now.

I guess the only real difference is that the Germans wouldn't have committed atrocities that would doom their diplomatic reputation for decades to come. Kaliningrad and Northern-Poland would still have a large German population, Europe would have around ten million Jews, antisemitism would be more acceptable since here wasn't a large attempted genocide to make people fear the possibility of it happening again, Israel wouldn't exist to the Middle East would know at least relative peace until the Iranian revolution, and there would be less guilt placed on Europeans so instead on the EU accepting 1,300,000 refugees they might have just taken 500,000 assuming the Syrian civil war still happens. (given that Mosssad is the middle-eastern CIA I kinda doubt it honestly)

I think Hitler might have still got his ass kicked, but than again he'd have Einstein on his side probably so he may have had an advantage there. If he loses there's a good chance the Soviets get Einstien, so that would have sucked massive horse cocks. .
