Biologically speaking, that makes absolutely no sense at all. The usual course is negative feedback inhibition which would mean an intake of excess estrogen would inhibit further stimulation for synthesis of more estrogen. I realized eating dairy was breaking me out and that's probably been the best realization I've had for my skin. Even after going on Accutane, dairy still makes me break out. It just really fucks some people up, and I'm one of them.
I'm by no means saying you shouldn't eat dairy if it doesn't give you any problems, but I'm way less bloated, have clearer skin, and consume less fat calories as a result. Plus, I still get enough protein from stuff like eggs, meats, and peanut butter.

If anything, a constant intake of estrogen from an external source would lead to a deficiency in estrogen in the future when milk is taken off the diet. This would cause imbalance in hormones which would cause the body to produce excess estrogen to try to maintain equilibrium. Of course this would only be the case if the male body naturally produced at least a small concentration of estrogen. I dont know much about estrogen and its effects.
So perhaps OP was on a estrogen high when he broke his plateaus and may be pointing his finger in the wrong direction when it comes to pointing out faults.
