My ratios are all kinds of fucked up, but I guess OHP being my best lift is pretty nice because delts are the most important part for aesthetics

I don't really push my maxes. My casual 3 rep maxes are 65, 100, (don't squat) and 185 kgs.

I think that if I pushed myself I could hit a 5 rep set for these numbers.

How do people who write programs expect you to do 5x5 at %90 of your 5rm? I have to go to like %75 and rest six minutes to complete every set.

Well this has to do with your endurance capabilities and work capacity.
Unless you're like severely advanced, you shouldn't need to drop percentages that much in order to complete the workout. Of course, there's a genetic component to that (some people can do a max triple at 92%, some at 87%).
What are your current stats? My guess is you're not efficient with your technique/form, not pushing hard enough or that you're not used to high volume training.
It's definitely a fixable problem though, but the solution is dependant on the cause.

I think you're simply not used to that style of training since your lifts are not advanced enough to be taxing to an extent where you need to drop down to 75% of 5rm.

Funny you should mention that. I'm currently doing a TM variation (alternating deads and squats) and my lifts are pretty much the same as yours. I have no problem with doing bench and press 5x5 @90% of my 5rm, but it's utterly impossible for Squats or Deadlifts. I've dropped it down to 75% of my 5rm and during my 6 weeks on this template I was still VERY sore in my quads or hamstrings from the volume and I still felt the soreness on recovery day. I'm trying to bump it to slowly up the percentage. I'll go with 80% this week and see how it works out.
