Small enough to make eating it convenient. I cook it long enough to see the uncooked parts disappear. Once there are no pinkish parts you're usually good to go. Then i add the honey and roast it long enough for it to caramelize onto the chicken, but not long enough for it to burn to the pan. That's about it desu.

My county allows up to 3 chickens in my suburban backyard. Im getting my happy ass some brahma chickens.

You have no idea. Chickens are aggressive and sometimes even fearless around less aggressive dogs and cats. Mine used to scare away my cats and dogs when we fed them to steal their food, and we had to watch them eat so the chickens stayed away lol.
