But you have to remember that evolution =/= selective breeding (direct and indirect selectivity).

It does happen over 30k years. But it happens even faster when you selectively pick the strongest blacks to take to the US, then the top 50% actually make it through the trip, and then for 2 centuries the top 10% survive/are bred in the cotton fields.

the reason the definition of species may change is that
1. horizontal DNA transfer has been confirmed. Some organisms can take DNA from another organism by eating it etc, and integrate/use that DNA. bacteria and virii are famous for this but recently, it has been discovered in large animals for the first time.
2. species have been discovered that are widely genetically variant and do not live in the same place, but can interbreed and produce truly fertile young capable of multi-generation reproduction. This betrays the current definition of a "species" and is basically the exact same thing you see with dogs.

The amount of variation in dog breeds is from selective breeding yes, but only possible because of the large amount of tandem repeats within their DNA - this allows for greater variation compare to other species.
