Because of ethics and how studies are conducted, it is incorrect to say anything actually causes cancer. Unless they fed a bunch of people only animal products, which is why there is the issue of ethics (why would you make someone eat something perceived as unhealthy), they can only say there is a risk association or correlation. I'm also willing to bet that these pro vegan studies aren't too strongly controlled so as to make higher % risk estimations.
