I made one of those for breakfast this morning

Fried over hard with ham.

Fried in olive oil with salt, pepper and hot sauce.
3 egg Omelet with veggies and some cheese on top. my favorite

>caramelize onions, hot peppers of some variety, sometimes garlic
>midway through caramelization throw in other protein (chicken, good german sausage, etc)
>depending on mood when almost done throw in spinach to wilt
>depending on mood and how spicy peppers are maybe add some creme fraische (essentially sour creme for fellow burgerlanders)
>remove all from pan
>whisk 3-4 eggs with some creme fraische
>turn down heat, pour in eggs and wait a minute for bottom to cook a little
>pour stuff onto one side and let omelette set up (optionally add cheese depending on calorie goals)
>when stiff enough fold empty side over onto full
>turn down heat once more and let cook through
alternatively
>prep internal ingredients same but always with spinach and maybe a little more
>separate eggs, whisk whites to stiff peaks, mix salt in with yellows and a little creme fraische
>add a little of the whites to the yellows and mix in so it's a little foamy, then mix in to rest of whites with as few strokes as possible to preserve fluffiness
>pour into empy pan, immedietly turn down heat and add rest of stuff over the top and let it sink in
>add little pieces of goat cheese sprinkled over the top
>cover and let cook until fluffy pieces are all cooked

>crack eggs into cold, unseasoned pan
>add butter
>beat
>turn on stove to a low heat
>stir constantly
>turn heat off when the eggs look slightly underdone
>serve
perfect eggs every time
I do them sunny side in my non stick skillet.
I usually scramble them in coconut oil or butter with some mushrooms, previously cooked beans, and various spices, but I am about to boil some to prepare for the next few busy days at work
