For example oven baked chicken legs vs fried(without batter) if so how do you figure the caloric difference in baked vs fried foods

How do you count the oils you cook with?

How accurate are nutrition lables?

When you overcook red meat the fat melts away and the macronutrient content changes varied on the temp you cook it on. How do I reconcile this with my autism?

I count it entirely in my caloric intake. Make some eggs with a tablespoon of oil, count that tablespoon of oil in your calories.

It does a bit, but honestly the errors in your measurements are probably larger than the differences in preparation. That is your kitchen scales/your rounding because it's easier will likely contribute more than oven baked vs pan fried vs poached etc. The main differences you encounter will be dehydration/hydration of the food and the amount of oils/whatever else you use contributing slightly. If you're to the level of weighing everything you eat the only way you'll significantly get a better measurement of your calories is if you literally blend and lab analyse the food for macros, but even then you'd need to do some scientific method shit on every meal of homogenising and splitting so that what you eat is statistically close enough to what you measure.

As above. Also if you're eating fried food then I wouldn't worry about accuracy of measuring as you're likely going to lose interest in weighing stuff, forget to weigh stuff or not have enough self control to not eat shit food over the long term for the differences in cooking style to ever matter

Weigh the meat post cooking if this concerns you, ensure the macro values you use are for that cut of meat and cooked rather than raw/different cut eg sirloin vs scotch fillet etc. The majority of mass losses from this though will be dehydration not fat running away.

If you are cutting hard it is indeed ok to consider it all, but if you dont it is problematic.

I dont have a solution either.

Of course some will evaporate/get left in the pan etc, if you consider a daily consumption of something like 2000-3000 kCal though the lost 10mL of oil will be such an insignificant portion of this that it is pointless to consider. If you wanted 99%+ accuracy you'd need lab quality scales, homogenisation of the food and some sort of splitting for statistically representative samples to be measured. All of this would gain you 2/5 of fuck all over basic kitchen scales. Considering the OP is likely not measuring accurately, forgetting snacks, visually estimating oil/butter/peanut butter/fucking whatever it is honestly a pointless exercise to try and be more accurate. Kitchen scales and the 'close approximation' home method will likely get you within 10% of your daily intake. Since he likely isn't recording his heart rate over the course of the day and is using a generic BMR calculator, getting the calories in more accurate than 10% error doesn't matter as the energy expended each day probably has a larger error in estimation. Even if you are competing missing a few mL of oil evaporating isn't going to significantly change your daily consumption beyond the errors elsewhere
