Red meat gets lumped in statistically with processed meats, which get lumped in with highly refined carbs. In other words, The find out that people who have diabetes eat lots of pizza, tacos, etc. and therefore it's the meat that did it.

Correlation doesn't imply causation, but it doesn't imply not causation and an excuse to ignore the relationship either. Generally you'd want to investigate it further by seeing if it holds in different samples across space and time, account for interfering variables, check for physical/chemical/biological plausibility, identify mechanisms, establish a dose-response, integrate experimental modalities that have differing sources of potential bias, etc
You also need some reasonable standard for causality, else you could deny everything from cancer to special relativity. Red meat definitely looks like an independent risk factor if you look look into some of the mechanistic literature (heme iron, Neu5Gc, saturated fat, cholesterol, AGEs/ALEs), but I'm not sure the magnitude of increased risk has been concretely identified in systematic reviews.
