I used to think the same, but then I started eating shitton of veggies mainly because I need low calorie foods with high volume and after starting this its like I've never felt better in my life. Literally my quality of life improved in every aspect , especially when it comes to inflammation, digestion and acne (skin health). And I was still eating healthy before as well , still had veggies but a couple of serving only and included supplementation with various high quality multivitamins. Overdosing on veggies is the real shit. Never going back.

I eat 5 pounds of broccoli a week since the rice cooker I bought has a steamer. It's the first vegetable that tastes good to eat for me. I am going to try to cook fish in the steamer someday.

In a way vegans are sort of right because even in a 'normal' diet we consume too much meat. For pre-modern man, most of their diet consisted of vegetables and grains and meat was a rarity, eaten roughly once a week (though I think those living near the coast ate fish more often, but fish is different and generally healthier than meat).

Way cheaper than spinach, one cup cooked is 5g of fiber at 20 or so calories, great amounts of Vitamin C, K and A, manganese, folate, and copper, with a bit of calcium, potassium, and magnesium. A bunch (typically how they're sold in my area) will make 6-8 cups of the stuff. The cons are that they make your farts smell like octanethiol and it's not that versatile; you have to first stew it for ages to prevent it from being bitter . When cutting I just eat it in soup form or put a bit of mustard on it, otherwise it goes well with ham hocks, deli meat, or bacon.
