Honestly, I'd stick with the good ol' SS 3x5 scheme and use the rest of your energy doing accessories for hypertrophy. 3x5 > 5x5

that's a bad idea at later stages, you'll need at least 2-3 minutes to rest between sets, and when you get really advance that can get up to 10minutes or more

when you get stronger you need to rest more

I have been lifting on and off for like 2-3 years. I just started up again and im going slow im only squatting ass to grass LMFAO less than 1 pl8

You start off as 3x5 then move onto further volume, starting with 5x5 will just mean you stall sooner.

There are many ways to skin a cat.
Swap to 3x5 once you have stall deload by 10% and push it again until you stall after the 2nd stall just switch to an intermediate program 3 day program and then switch to 4 day one and enjoy being on it for literally years until you get bored of it rather it stalling.
