What spices would you guys add to ground beef besides salt and pepper? My ground beef always seems plain even with the salt and pepper.

Chipotle powder. Adds a pretty strong kick, so use it sparingly. Great smoky smell/flavor, though.

Black beans and taco spice mix. If you don't want to buy pre mixed taco spice go for chilli, paprika etc.

White pepper
My favorite woukd be old bay, crab boil.

I like a little cumin seed and chili garlic paste.

pretty much any herb/spice blend works with beef. You could even make pumpkin spice beef, I shit you not.

sweet smoked paprika (optional, but good)

a touch of cayenne

i think i found it in a recipe for enchiladas once, and liked it. i've always considered it a sort-of generic mexican seasoning mix

well considering OP only used salt and pepper, i figured they were a beginner and i'd suggest the more convenient onion powder/flakes instead of "finely dice and sautee some fucking onions in the pan first"
