Mate it's literally more efficient to reach bear mode on a vegan diet. Your protein intake will be pretty constant whatever your goals are; having more calories and fats/carbs to play with means its even easier to hit the protein macro by accident. I.E: beans, nuts, etc.
Honestly? With bearmode as your goal your only worry should be eating enough food every day with a working digestive system at the end of it. And also the cost of eating that much (which is cheaper as a vegan but harder on the digestive system). Its fun to eat a lot for a while but eventually you'll get sick of it, lose your gains, and just be "that fat middle-aged guy who used to lift".
