You're doing it completely wrong if you're eating at a defecit. Eat at a 250-500 kcal surplus all the way to maybe 170-185lbs and then take a look at yourself. You are undereating. Also lift to get strong because it's the faster to get big muscles when you are already strong.

Assuming UC is ulcerative colitis. I don't know much about it or what foods irritate your gut. I'd do a caloric surplus with low GI carbs (beans, oatz, brown rice, etc) and just get your protein and greens.

For lifting, maybe focus on heavy compounds to build your frame, with some more isolated work on the muscles used that day. (hit bench, then maybe skullcrushers / tricep extensions then butterflies). Do some HiiT after.

Lift more regularly, eat balanced.
