No it's not necessary, corn starch isn't that bad for you but it's better without it. Corn starch is just used for consistency of curry. It' will taste the same with or without it but it might be runny without it.

And I don't think that's how curry smell works, it's not based on how much you eat it, it's just when you cook it. The smell will remain on you until you shower and change your clothes.

almond milk doesn't have much fats, and low in calorie. It will be fine with curry, it's really just there for flavoring anyways.

In theory, curry is amazing. The stuff you get from the takeaway is loaded with fat however. It is simple and adds a savory taste.
My recommendation:
>chop onions, garlic, ginger, chili peppers
>dice tomatoes (a whole lot)
>put pan on oven on high heat
>add a small amount of oil
>throw some mustard seeds in the oil
>after a couple of seconds (don't let them burn to a crisp) add the onions, garlic etc
>one the onions are sort of opaque add the diced tomatoes (can be canned)
>put on medium heat and let it simmer for an hour
>use a stick blender to turn everything into a pulp
>let it simmer (to evaporate water) until it gets that cream curry texture that you know
>meanwhile slice or chop chicken breast into desired size
>put a little oil in the pan and sear the chicken so it gets a little brown
>don't worry about cooking it through
>one the chicken is seared on the outside throw it all into the previously stick blended curry soup and let everything simmer together until you have reached curry texture
>unless you know your way around spices (I assume you don't) get a good curry powder and garam masala from the ethnic food store
>add some salt
>once you've reached the desired consistency take out a piece of chicken and cut it to see if it is cooked through
this is a BASE curry, you can add any kind of vegetable, change the type of meat or add stuff like coconut milk (high in fat) to your choosing. But perfecting these basic steps will give you a good basic curry that you can adapt and develop over time. I love serving it up with a big spoon of yogurt and some chopped spring onions on top of it, but to each their own.

awesome tricks and tweaks for my curry:
>marinade sliced/diced chicken over night in yogurt and garam masala + curry spices
>replace 1/2 the diced tomatoes with egg plant
>add red beans (canned unless you want to cook for 5 hours) or red lentils before stick blending to get a creamier texture
>add a whole lot of spinach before blending to get a green curry
>replace 1/3 of the tomatoes with bell peppers
>try learning about spices so you can blend your own curry

making your own (low cal) mango chutney:
>get two mangoes and dice them
>chop ginger and chilli pepper (go easy with the pepper, the heat will multiply tenfold in this recipe)
>add water until the diced mango is barely covered
>turn on medium heat and let it simmer for ages
>stick blend everything into a pulp
>keep simmering until mango chutney texture is reached
>add half the chutney to your curry and use the other half as a condiment on your plate

Lean steaks are good my friend. Use extra light olive oil while cooking them and season with onion powder/minced onion, minced gairlic/garlic powder, sea salt, paprika, and cinnamon. I highly recommend doing a high heat sear though unless you prefer rare I would cook it traditionally as the outside may burn.
