I do something similar, but I use chicken thighs with bone and skin, I cook them in my electric pressure cooker with some chicken stock, and I season with salt, pepper, thyme, paprika, and garlic powder. The pressure cooking makes them nice and shreddy.

Easiest way is probably a bouillon cube.

From there you can add celery, rosemary, cardamom (goat combo with chicken).

Caramelizing the breast in butter is also a good step before poaching it.

Buying chicken bones (back or neck) is cheap and easy to ad flavor.

The best option would be to add chicken fat (either breast with skin or what I do which is to chuck in some gizzards).

I've listed the steps from easiest and lowest calories to most work and most calories.

pretty much what you are doing, but you flavour the water with ginger and spring onion. keep the skin on while you poach. you don't need to bother with the usual step of dunking in ice water desu. i haven't watched the video but it is just to give you an idea fo what hainan chicken is
