White cheese, similar to queso fresco or chhena/paneer in preparation, and very closely related to cottage cheese. Heat milk, curdle with acid, press out the whey, done.
Lean quark - nearly 0% fat - is usually available in even a very smol grocery store here, cheap as fuck, very filling and has absurdly great macros. Pretty neutral taste, but you can spice it or mix it with stuff.
