The whole fitness science is snake oil tier bullshit. I have thyroid bullshit problems though. Don't lose weight on T3 + deficit + cardio and it's driving me insane.

It happened to me too. My macros were spot on + 500 calories a day but I wasnt putting on any weight so I bumped it up another 500 calories for two weeks and i put on more fat than I wanted but after those two weeks I went back to just 500 calories extra a week and I started putting on weight.

CICO is a fact, though often hard to determine how much.
Then the ratio to fat/muscle you burn is dependent on pretty much all those other factors you've listed.

I thought you're supposed to do 250-350 calorie surplus on a bulk. 500 is pretty much an extra lb of fat a week and what you should cut on.

250 for natties, 500-750 for enhanced. 1-2 big cheat meals weekly when bulking either way to keep metabolism up.
