Honestly dude, a low fat diet is great. I’ve followed one for a few years now and was able to cut 40 lbs without really feeling like I’m missing out on much.

I’m still eating plenty of meat and potatoes. Also genuinely feeling better too. Less inflammation and more energy.

I'm assuming you're young too which also means that your body can pretty much handle any diet and feel relatively well. my metabolism is fat adapted bc it is best for my body type, but there is nothing wrong with people liking low fat diets, as long as they work for them.

The government has an incentive to keep demand for grains high because the US has the capacity to produce heroic amounts of the stuff that can potentially be used to great effect in international relations and warfare. If demand drops then farms may shut down or reduce production, which would make it harder to spin that production back up whenever the government wants it. Lots of ag subsidies exist for similar reasons.

Yeah duh, vegetable oils are a relatively new food and along with carbs are the worst things you could eat; hence why they're promoted by the government.

Grain is easy to grow, and the government can GMO the fuck out of it, etc. But lets face it, it's not like we have enough pasture to feed people the proper foods anyways. I personally didn't grow up on such a sugar oriented diet, but when I switched to a low carb diet a few years, I noticed a huge reduction in my anxiety and social behavior, for example, I completely stopped biting my nails. I've noticed this a lot in other people too, most people whom I know that are awkard in public or are socially anxious have terrible eating habits and eat a ton of sugar/carbs.
