It's supposed to be how farmers are complete morons who can't fight and don't know shit, but when a warrior gives up on warrior-ing and tries farming he suddenly becomes enlightened by the simplicity and dedication to raising the farm and he no longer cares about being strong but that only makes him stronger or some shit.

Or maybe it's because farmers were one of the most used disguises by ninjas.

Besides those two series, did sudden farming happened anywhere else?

Both the east and the west idolised farming, user. Simplicity of life, self reliance, unambitious, the bedrock of their economy, and so on.

Sneak with questionable morals hiding in a party of do-gooders.

It's supposed to be a warrior coming to better understand life by cultivating it, as he is already well acquainted with death. It usually comes after the warrior starts suffering from PTSD. For Thorfinn it was Askeladd dying and realizing that he was losing not only his goal for revenge, but also a father figure.

For Musashi, it was killing 70 men in a single night, and transcending his own limits, and only then questioning just what and why he was doing what he'd been doing.

The farming then helps then understand these foreign ideas stuck in their heads afterward. It' a change of pace and broadens their perspective in a "Oh, this is what life is like as well, not just fighting and killing" sort of way, and focusing all that discipline and energy into something that is actually beneficial to the world around them.
