First screening is recruiting from universities and the like, so the intelligent part can be reasonably granted, then it's time for physical tests where you have to score a minimum to pass. No test is like the one that came before it and no one knows what the score needed to pass is, thus everyone is on their toes and strives to exceed his limits. This is also the first way to test mettle and willpower too.

After that a fair number of aspirants will have been discarded already and deeper tests may start, along with training that more closely resembles the activities that knights will have to perform on the field. Look I get why you probably think this is a good idea but it might not be. All it would do is encourage and perpetuate myths of knighthood being a club where only daddy knight's kid gets chosen for performing good.

Which could be a benefit or a hindrance, depending on how you want knighthood to be perceived by outsiders and commoners.

To clarify, this is the type of scenario that could occur: "Dad told me test 1 is do 1000 pushups in an 8 hour period, and test 2 is a surprise exam of doing 100 chinups immediately after finishing my last push-up. Guess I better pace myself and rest before finishing my pushups!"

If it really happened, that would be a further way of ensuring that only the most intelligent apply in the first place.

I think having the test be random every time would be kind of pointless for a knight. The test should be related to what knights are primarily doing in war, like long knight rides before a battle or charging across a field as fast as possible. That's why modern armies (and ancient ones)
have standardized physical tests.

This is a screening test to discard the ones that don't reach a minimum of physical fitness, ensuring you don't have to waste much time preparing them before actually starting the training. OP specifically mentioned that you need to be exceptionally strong to get knighthood, riding a horse is not the best measure of that. I already addressed the specialist training happening after the initial screening phase.

And while it's true that modern armies have standardised training, some special forces units use exactly the method I'm talking about.

OP here i was thinking that only about 10 people qualify to be a knight, so what could be a good first test so by the end of it there are only about 300 applicants? i was thinking in a battle royale but that would be quite long

I literally just told you user. If you want to go that route for gameplay purposes though, you can always cut time by playing a series of mock battles instead of a long battle royale. Puts focus on the PCs and saves time while the rest happens in the background.

1v1 Sparring. Every win is one point.
The top quarter competitors go on.
After that, a shooting competition with the most common ranged weapon around. They must shoot four targets at 10, 30, 50 and 100 m as fast as they can. Outer 20% is one point, inner is 5, 10% is 7 and inner 5% is 10. Time bonus is 100/time in seconds.
After that, they must answer some logic riddles. You have to decide which, what I think is smart could be incredibly simple and vice versa. 5 points per riddle.
Finally, live fire exercise. They must breach into a [insert humanoid enemy] lair and bring back the greatest amount of ears/tails/whatever. One point per token.
