Does anyone else hate this trope? Is this some misguided "oh you can't hit a girl" thing that's survived for decades? Do they really think murderhobos will hesitate to kill an enemy because they're hot?

No, it's the opposite. You see, your average murderhobo will just draw their sword, step towards the villain, and lop their head off. By transforming into a huge monster, you turn the situation from a single-stroke victory into an actual battle for your party of murderhobos.
Not really. I love killing big, mean monsters with oversized swords and big explosions.

Murderhobos would do something to a hot female enemy, and it might end in their death, but it /probably/ won't start that way.

And the obvious answer is that a huge monster is supposed to be more intimidating. Hell, a dragon is generally more intimidating than a hulking man, so it's not even sexist.
So Final Fantasy, basically. Or Dragonball Z. Just that it's actually a guy.

Personally I like it when it's permanent and horrifying, like a witch becoming a horrific spider hybrid.
If someone wanted to redeem them, it reduces the chance of them dicking the bad guy and makes it more of a moralfag decision.

No, it's way better than turning it into a generic "oh shit, she's fast!"-anime bullshit. If she isn't a mage, then there is no chance she'll be able to kill the team of paladins/wizards/blackguars alone in a melee fight.
