Because thats how you do a Shoota. Orks do thing by pure instinct. A Shoota has gubbins.

As silly as the gubbinz may be, the Waaaagh field is actually not doing a lot of heavy lifting to make shootas work. Orks have the knowledge of tech encoded into them on a genetic level; a given piece of Orky tech is actually very close to functional, and only needs the Waaagh field to make up for how the Mekboy forgot to put in the firing pin because he got distracted yellin' at grots.

I like the way that the RPGs like Rogue Trader handle it. Ork weapons can work for any user, but they are unreliable for anyone who's not an ork. An ork is going to be able to use it much more easily and avoid jamming. Way I see it the Waaaagh field is more like lubricant, helps the whole thing work better and perform to expectation rather than magically making an empty box with a tube jammed into it shoot like a real gun.

You ever look at those Chinese mystery pistols, that sometimes were well made and good copies of other pistols, but usually had some weird flaws or quirks that came from being made by people who knew about metalworking, but not about guns? Sometimes they'd add a rear sight that wouldn't line up with the front site, or looked like it was a movable sight when it wasn't.

This is the exact same situation. They aren't adding iron sights for actually using them, but because Orks think that's how a shoota is supposed to look.

How long lasting are tyranid teeth? I get the impression most organisms are evolved for temporary use and to be reabsorbed into the hive biomass after killing and/or eating everything in the area. Teeth that last forever don't seem selected for.

One thing is not the same as the other thing even if both are teef.

Orks don't deal with these things as one unified body, they likely have many different solutions to this depending on which Waagh.
Some Orks might shun the use of non orky teef in the econamee, some orks might begin using tyranid teeth on their choppas based on their durability and cutting potential thus removing them from the economy (a choppa made o' teeth would be right flashy), some might even try and get into fights with nids with the promise of so many teef for trading.
