There is a large gap between being a medium and reviving corpses and channeling death energy.

Honestly when you think about it Skeletons and zombies are just respectively bone/flesh golems. You only get into lich territory when you shove an actual soul in it.

Even if your bone golem somehow awakened it's still an awakened golem and not technically undead.

However, this is not the case for D&D logic but I feel it should be that way.

Necromancy refers specifically to communing with the dead. It comes from ancient Greek and means "divination via a corpse". Raising undead or throwing around "death energy" is more... thuergy?

That is a good necromancer. They are doing their job class correctly.

Necromancy is literally being a medium through the dead user.

That's the rather archaic definition that's not really important compared to the modern definition in regards to traditional games.

Except skeletons and zombies are unambiguously evil entities in their default, uncontrolled state.

That, and they use lingering aspects of the soul, preventing proper rest for the spirit that ranges from an unknowable interference with the cosmic order to downright torture for the soul.

That or they're animated with energy that is actively harmful to any and all living things.

Necromancers are mages that study all things related to death, souls and the afterlife in general. They do this so that they can gain power over the dead, yeah, but it's obvious why taking the path would be necessary to learn how to commune with the dead.

Most versions of necromancy either don't use the original soul for the reanimated dead (in which case you just filled your parents' bodies with an evil abhorrent life force) or souls aren't engineered to stick around after death and they suffer terrible ailments by being kept in this world. Just summon their ghosts if you really need to talk to them.
