So far we the saberfaces that we have (at least ones that I remember) are Arturia (8 different versions), Mordred (2 different versions), Nero (2 different versions), Jeanne d'Arc (2 different versions+1 modern near perfect copy), Okita Souji, Demon Saber (fusion of Oda Nobunaga and Okita) and Gray.

I want to get into Fate, but I can't stand visual novels as a type of media. I've ever finished only Saya no Uta (one route) and a few short nukige. Read F/SN up to the third day and then dropped it.
I really enjoyed Fate/Extra, but I probably didn't understand many references and fanservice moments.
I played F/GO for a few weeks on release, but got bored very fast, deleted it and didn't save the account code or whatever thing you need to restore your progress. It has many nice looking designs though.
Probably I should watch the anime already or just give up on the franchise. After I finish Fate/kaleid liner, anyway. I'm such a filthy secondary.

When you go for the anime, make sure to not watch the one called "Fate Stay Night". It adapts the first route of the visual novel and it's "let's all just pretend this anime never happened" levels of bad.

I'd instead recommend "Unlimited Blade Works", which is an adaptation of the visual novel's second route. Knowing the first route's events is not required, you can watch it standalone.

You can also watch the Fate Zero anime, a prequel to the events of Fate Stay Night. You can also watch it standalone.
