However, a traditional name for samurai is "the Way of the Horse and Bow", and samurai were traditionally cavalry experts so the visual imagery kinda fits.

Given that "Japanese fantasy" largely requires usage of certain themes in writing and story structure rather then imagery, you literally can't DO "Japanese fantasy" in art beyond just incorporating Japanese visual motifs into it because the major aspects that determine Japanese fantasy are literary and not visual in nature.

You're thinking "kyuba no michi", which is not a title, but a description of lifestyle.

"Samurai" is actually not the proper title, but apoetic description, which originate from an epic poem Kokin Wakashu describing the idealized bushi. While many western scholars use the two terms interchangeably, the proper term is strictly bushi.
