The human brain dies because it was removed from it's body, the human body dies because it was removed from it's brain.
I suppose it's possible the ork brain and body might survive the experience long enough to be put back together.

How about instead of swapping physical brains we instead swap the brain signals that make up their individual consciousnesses? With a few minor physical changes to make sure the human consciousness doesn't get immediately overriden by ork hormones and the ork doesn't immediately go docile.

The human will be at first a bit freaked out, then stoked due to the newfound strength and power, then depressed due to the objective ugliness of their new body and lack of genitals.
If they somehow cope with that they will probably be hoovered up by a rogue trader or inquisitor to be used on high risk missions, probably stuffed into a suit of heavy armor and given a really big gun.
