Am I canonically allowed to have my SoB live for centuries in my army's saga? That way I don't have to keep fleshing out new characters every century?

Live-indefinitely tech exists, but is prohibitively expensive, fiercely guarded by admech or totally heretical (eg. Halo Devices).
It might be a viable option for leaders or recognized heroes but certainly not for rank&file.

Well, they're kinda a bit heretical for SoB, though they don't know it. They're part of a small offshoot of the Argent Shroud that accompanied a contingent of Tech Priests and colonists on an archaeological mission to a dark distant world named Mundus Temebras on the fringes of the galaxy. Early probing strongly suggested the presence of a long dead ancient human colony. The tech priests are going in search of ancient tech.

That was a long time ago, and due to the inhospitable conditions of the world, the colonists were slightly modified to better handle the environment; nightvision, stronger bodies, resistance to radiation, etc. Thus they're all a bit abhuman. Thus by now all the sisters are abhuman.

But they don't really know that's a bad thing anymore because they've been isolated from the Imperium for so long. Their last Imperial transmission was 700 years ago.

Their doctrine has also been somewhat contaminated by that of the Tech Priests. They now believe The Machine God and the Emperor to be two expressions of the human god, and that his perfection can be found in both man and machine. Thus the ultimate way to worship him is by fusing man and machine harmoniously. Thus they're all at least a little cybernetic.

Rejuv can allow a person to live for a few hundred years.
Since almost every bumfuck noble (which must number in the millions on each hive world) can afford it, it's probably fairly available to Sororitas.
Whether they live long enough to need it is another question, and the really high end juvenat is probably too expensive, but a couple of centuries for a basic sister probably wouldn't be impossible.

And that there's the kicker. Most sister's don't even survive to normal life expectancy, what with their occupational hazards and all.

One thing to keep in mind is that a large number of SoB are Schola graduates. You want keep those around as long as possible, so I imagine that those who live long enough that rejuv becomes necessary will get access to it, just like Schola graduates in other Imperium institutions,

There are several 100 year plus old sisters with bodies like a 25 year old.

To be honest the actual death rate of sisters of battle is never really established or hinted at. Obviously the ones involved in the big climactic battles we read about aren't gonna have great odds, but there are plenty of SoB out there guarding holy sites and escorting bishops and stuff, or just spending their time destroying shitty common cults.

Then of course there's the Hospitaller, Dialogous and Famulous who don't even go into combat (usually).

We don't have any hard numbers (like almost everything with the AdSor), but we know that the Sisters of the Valourous Heart have a significantly higher rate than other orders.

The original fluff for my order was that they worked closely with the grey knights hunting witches and rogue psykers prone to summoning daemons in their sector, and I painted them to match my GKs aka silver armor red robes. This was back in 4th when that wasbt a thung and GK and SoB could ally with each other exclusively. Then the 5th edition GK monstrosity happened and did away with allying. I sold all my GKs, and changed my fluff to make them an offshoot order from Argent Shroud, but seeing that picture always reminds me of back then.
