Skeletons can last a lot longer than flesh, flesh rots while skeletons take far longer.
Plus if the necromancer is alive it's unhygienic.
When I mean 'last a lot longer' I mean in the sense that It can just stay in a spot and not rot away, in combat flesh is also useful for absorbing shock but one has to look at both angles.

Apprentice necromancer here, a few questions.

Can I only necromance animals, or can I do plants too?

If I can necromance plants, then if I necromance dead plant matter like a tree, does the wood count as flesh or bone?

Also is it possible to necromace fungi?

Ghosts are the real answer.

But ghosts are typically sentient unless they are just bits of emotion clumped together, and usually ghosts are not happy at being enslaved.

I think the cutoff is sapient creatures that have souls. Else you'd see necromancers also becoming terramancers since soil is dead dinosaurs.
