Well you could base it on the slow decay a fair number of males experience as they go from "good looking" in their 20s to balding and potbellied old man in their 50s.

I think a lot of mages would let their physical appearances slide, as they tended towards obsession with their work and a lack of concern for physical matters (being themselves involved in a higher metaphysical reality).

Looking somewhat aged and experienced gives off a more academic/mystical air than turning yourself into a turboslut. Given that mages are all about 'muh knowledge', I figure they'd care more about looking impressive or respectable than going for beauty and raw sex appeal.

Socialite Wizards, Witches and Sorcerers would likely be focused on looking impressive. These are the ones that look youthful even if they are 60/80/210.

Research Wizards, Witches and Sorcerers are likely the ones that are likely to look old unless their research focus is focused on something like eternal youth/life.

I think most of the wizards that go on to become some sort of legendary figure (so and so the great, the terrible, the owlbear creator, etc.) would come from the latter, as a concern for physical matters would detract from the pursuit of metaphysical concerns (which fits with many real world mystical traditions as well, neoplatonists were supposed to be concerned with "higher" things, as were gnostics, for instance).

Not necessarily. Quite a lot of the the researchers are going to die alone and forgotten leaving only a ruined tower/dungeon for adventures to explore.

The owlbear creator is probably one of the best examples of this. The creator's identity has been forgotten and the only reason anyone knows they once existed is the continued existence of one of their projects.

Socialites on the other hand are more likely to be remembered if they develop something interesting.
