Feuds between local lords, all with ninja spy hijinks and awesome duels.
"Religious" fights between monastic orders.
Court intrigues.
Protecting wandering sages.
Getting rid of bandits oppressing poor peasants.
Defending against invasion fleets.
Being part of the invasion fleet

Oh, and I forgot that samurai made a name for themselves as mercenaries in the south-east asian sea.

Buncha pissant peasantry are refusing to pay their taxes and with the help of some uppity no-name samurai whom they worship as some kind of folk hero, they've taken to claiming autonomy from the state. They've even gon e as far as to harbor criminals under their protection. You need to put a stop to it, but that samurai turns out to be the retainer of a minor lord who's the younger brother of your lord's lord, so any slight against him will technically be stepping outside your station -and this dipshit knows it. You have to first trick the samurai into dishonoring himself, to strip him of his diplomatic immunities, then turn on the rebels while retaining the infrastructure of the town's economy, and capture any other hiding outlaws and bountyheads before they scatter into the wind at the first sign of trouble. Also maybe the town is cursed, i dunno

The setting is great. It's the metaplot that's cancer.

Luckily, metaplots can be rewritten easily. Just pick up a first edition book and use that for lore.

I'm actually playing in a campaign where this is the adventure we're going through. Last session ended on a cliffhanger right at the cusp of the boss fight, as we confronted the godnapper.

Local village is under duress and being extorted by bandits. You and six others must defend them, partially because you need the cash. Are you honorable enough samurai to send the bandits packing?

I'm in a weeb campaign at the moment. I purposefully made the most western inspires fantasy character I could and made him from as far outside of the setting as possible.

We're off to kill ghosts or something.

You can go different ways on it, look at the time periods in which samurai were active and the status that they had. For an adventuring party, maybe they're masterless ronin. Maybe they have to deal with the area westernizing and adopting guns. Make all the monster myths real, read some shigeru mizuki about fun youkai and have the party encounter them.
