imho opinion a poutine is this, Fries, Cheese curds and gravy. I'm a purist, some people though believe poutine is fries, cheese curds and a sauce of your choice and/or some other things.

I've had it a few times, about a decade ago. It was DELICIOUS. Chips, cheese curds, gravy over the top. Only, you can't get cheese curds in the UK, so I can't fucking make it myself.

I'm tempted to just use regular cheese instead, but I know full well it'd go all gooey.

I had a nice poutine last night from Harper's Burger Bar. Extras in poutine are nice but to have a truly great poutine you need the three basics. Soft crispy fries, Excellent gravy made from scratch and the best curds.
Thai poutine is pretty righteous too.

We have cheese strings, but I think they're more plastic than cheese, and they're expensive as fuck.

We have 'quark', which I think is LIKE cheese curds. Also 'paneer' and 'cottage cheese' which are also like it on the wikipedia page. But they're all expensive and I don't want to destroy perfectly good chips on an experiment.

I have no fucking idea what that means, though. Food is hard when they insist on using the same word for drastically different products.
