50:50 ketchup and mayo (not mixed and poured directly onto the chips) with a generous amount of vinegar and a dash of salt.

If I have to play by your rules though, mayo would be fine. No one should ever eat chips without salt and vinegar though.

I'd do the honey mustard and the mayo (separately, of course). I don't eat ketchup unless it's curry ketchup or very spicy ketchup, and I'd never eat sweet and sour with fries.

I would never have just one, I would probably get the right three if they were all available at the same time.

None. I don't eat fries with sauce. I have a side of fries with my burger, which has ketchup and mustard on it. I also appreciate things like sweet/sour but only in some dishes.

Beef gravy with mushrooms. Diner style is the way to go.
