About 7 hours into brisket cook. Pushing through the stall right now. Will finish in oven (I know it's cheating) to conserve wood.

I am attempting babby's first smoke with indirect heat on a regular charcoal grill. St. Louis ribs, wings and sausage. Using hickory.

I've been able to keep it at 225 without much trouble. Going with the 3-2-1 method on the ribs. Brushing sauce onto the wings - buffalo on the left, sichuan on the right. My gf likes her sausage black (kek) so I moved her's over the heat the last 30 minutes.

Any pointers would be welcomed. I grill all the time but as I mentioned I've never smoked before. I feel like it's going pretty well so far

I forgot about this thread. OP here. I buen an all hickory for after some charcoal to start.

They're rubbed with salt, sugar, paprika, ground mustard, garlic, cumin, and hot chili powder.

They were on the grill for 5 hours and in the oven for 2 hours at 375 to finish cooking them. Wrapped in foil with a splash of water in the oven. I'll get a money shot soon.

My shitty fire box won't stay completely closed without it.

You're doing well from what I can read/see. I'd put the tray of chips as close to heat as possible.
