There's a flower used in SE Asian countries to color rice a bright blue.

there is no reason to put matcha in noodles tho, it's done for the color.

It also adds flavor. It's essentially green tea powder. If you have people who are crazy enough about it, they'll even get edible algae for a vitamin boost.
